This is one of those meals that will always feel like home to me.
I'm Jamaican, born and raised and brown stew chicken like this was something we had at least once, sometimes twice a week. It wasn't complicated, but the flavor was always there. That rich, glossy gravy, tender chicken, and everything soaking into rice… that's the part you don't forget.
This recipe stays true to how I grew up eating it - simple ingredients, layered properly, and cooked with intention.
Why This Recipe Works

How to Make Jamaican Brown Stew Chicken
1. Season the Chicken
Start by seasoning the chicken with salt, black pepper, garlic powder, onion powder, and paprika.
Add fresh garlic, fresh thyme, pimento seeds, Grace garlic ginger pimento seasoning, green seasoning, bell peppers, and scallions.
Finish with browning and mix everything together until the chicken is fully coated.
Tip: This is where the flavor starts - don't rush this step.
2. Caramelize the Sugar
In a hot pan, add a small amount of brown sugar and let it melt and darken.
This step creates the deep color that brown stew chicken is known for.
3. Brown the Chicken
Add the chicken to the pan and let it brown on all sides.
Do not overcrowd the pan - work in batches if needed so the chicken browns instead of steaming.
Once browned, remove and set aside.
4. Build the Base
In the same pan, add your peppers, scallions, garlic, and any remaining marinade.
Let everything cook down and pick up the flavor from the pan.
5. Add Broth + Build the Gravy
Pour in chicken broth, then add half of the ketchup.
Return the chicken to the pot.
Tip: Add ketchup in stages - this builds a deeper, richer flavor.
6. Simmer & Flip
Cover and let the chicken cook.
Halfway through, flip the chicken so both sides soak up the sauce evenly.
Add the remaining ketchup and continue cooking until the gravy thickens.
7. Taste & Adjust
Taste your sauce and adjust seasoning as needed.
Important: This is key - Jamaicans taste as they cook to get the flavor just right.
Final Result
You're looking for:
A rich, deep brown color
Tender, flavorful chicken
A thick, glossy gravy that coats everything
This is what makes brown stew chicken what it is.
The Secret to the Best Brown Stew Chicken
Browning the sugar is KEY! This caramelizes the chicken, locking in flavor and creating the rich, deep brown color that makes this dish legendary.
Marinate for at least 2 hours (overnight is best). The longer the chicken sits in the spices, the deeper the flavors.
Use fresh ingredients! Fresh thyme, garlic, onion, and Scotch bonnet pepper bring the dish to life.
Serving Suggestions
Rice & Peas: The classic pairing! The gravy soaks into the rice for extra flavor.
White Rice: Keeps things simple and lets the stew shine.
Boiled Food (Yam, Dumplings, Bananas): A traditional Jamaican way to enjoy this dish.

I noticed this recipe calls for 2 tomatoes diced, however I do not see it anywhere in the instructions or in your video… was this a typo or should it be added during the marination phase?

Thanks for catching that! The tomatoes are optional and can be added during the marination step or mixed in at the end for freshness. I’ll update the recipe card so it’s clearer.
