If you're looking for a cozy, comforting dinner that feels a little elevated but is still easy enough for a weeknight, this creamy mushroom chicken and rice is it.

Tender chicken is seared until golden, then simmered with caramelized mushrooms, garlic, herbs, and jasmine rice in a rich creamy broth. The rice absorbs all that flavor while the chicken finishes cooking right in the same pan.

    The result?
A one-pan dinner that tastes like something you'd order at a restaurant but is simple enough to make at home.

It's hearty, satisfying, and the kind of meal the whole family will ask for again.

    Why You'll Love This Recipe

    • One pan meal - fewer dishes

    • Comfort food classic with elevated flavor

    • Perfect weeknight dinner

    • Creamy without being heavy

    • Simple pantry ingredients

Boosting Flavor with Mushroom & Herb Bone Broth Collagen

To deepen the savory flavor in this dish, I added a scoop of Mushroom & Herb Bone Broth Collagen from Vitauthorityto the cooking liquid.

It blends seamlessly into the broth while the rice cooks and adds:

    • extra savory mushroom flavor

    • additional protein

    • rich bone broth depth

It's a simple way to boost both flavor and nutrition without changing the texture of the dish.

    Ingredients You'll Need

    Chicken

    • 4 boneless skinless chicken thighs (or chicken breasts)

    • 1 teaspoon salt

    • ½ teaspoon black pepper

    • 1 teaspoon paprika

    • 1 teaspoon garlic powder

    • 1 tablespoon Hunter's Poultry Seasoning

    Rice Base

    • 1 cup jasmine rice (rinsed)

    • 1½ cups chicken broth

    • ½ cup heavy cream

    • 1 scoop Mushroom & Herb Bone Broth Collagen (optional but recommended)

    Mushroom Sauce

    • 2 tablespoons butter

    • 1 tablespoon olive oil

    • 8 ounces mushrooms, sliced (cremini or white)

    • 3 garlic cloves, minced

    • ½ onion, diced

    • ½ teaspoon thyme (fresh or dried)

    Finish

    • ¼ cup grated parmesan (optional)

    • fresh parsley for garnish

    Note:
The mushroom and herb bone broth collagen enhances the savory flavor of this dish while adding additional protein. If you don't have it, the recipe will still work perfectly with just chicken broth.

How to Make Creamy Mushroom Chicken and Rice

    1. Season the Chicken

Pat the chicken dry and season with salt, pepper, paprika, Hunter's Poultry seasoning and garlic powder.

This simple seasoning creates a flavorful base for the dish.

    2. Sear the Chicken

Heat olive oil in a deep skillet over medium-high heat.

Add the chicken and sear for 4-5 minutes per side until golden brown. The chicken does not need to be fully cooked yet.

Remove from the pan and set aside.

    3. Cook the Mushrooms

In the same skillet add the butter.

Add diced onions and sliced mushrooms. Cook for 5-7 minutes until the mushrooms release their moisture and begin to caramelize.

Add garlic and thyme and cook for another 30-60 seconds until fragrant.

    4. Toast the Rice

Add the rinsed jasmine rice to the pan and stir to coat in the butter and mushroom mixture.

Let the rice toast for about 1 minute. This adds a subtle nutty flavor to the dish.

    5. Add the Liquid

Pour in the chicken broth and heavy cream. Whisk in 1 scoop Mushroom & Herb Bone Broth Collagen until dissolved.

Stir gently and nestle the seared chicken back into the pan.

    6. Simmer

Cover and cook on low for 18-20 minutes until the rice is tender and the chicken is fully cooked.

    7. Finish the Dish

Stir in grated parmesan (if using) and garnish with fresh parsley.

The sauce should be creamy and rich while the rice stays fluffy.

    Tips for the Best Flavor

    Don't rush the mushrooms
Let them cook long enough to caramelize. This builds the deep savory flavor of the dish.

    Toast the rice
This quick step adds a nutty flavor and helps the rice hold its texture.

    Chicken thighs work best
They stay juicy and flavorful during the simmering process.

    Variations

    Add spinach
Stir in fresh spinach at the end for extra greens.

    Make it lighter
    Replace heavy cream with half-and-half.

    Add extra vegetables
Peas, asparagus, or kale work well in this dish.

    What to Serve With It

This meal is already hearty, but if you want a side dish try:

    • roasted broccoli

    • simple green salad

    • garlic bread

    • sautéed green beans

    Frequently Asked Questions

    • Can I use chicken breast?

Yes. Chicken breast works well, but reduce simmer time slightly to prevent it from drying out.

    • Can I use brown rice?

You can, but it requires more liquid and a longer cooking time.

    • Can this be made ahead?

Yes. Store leftovers in the refrigerator for up to 3 days. Reheat with a splash of broth or cream.

This recipe was made using Vitauthority Mushroom & Herb Bone Broth Collagen, which adds both flavor and protein to the dish.

Just made this after scrolling looking for dinner inspiration and it’s a hit. It’s so much flavor. I didn’t have that collagen but it still came out amazing.
