Ingredients

  • 2 sweet potatoes diced (½-inch)
  • Olive oil
  • Smoked paprika
  • Salt and black pepper
  • 1 onion diced
  • Garlic minced
  • 1 lb ground turkey
  • Bell peppers diced
  • Chili powder
  • Cumin
  • ½ cup chicken broth
  • Spinach or kale optional
  • Avocado sliced, for garnish
  • Fresh cilantro for garnish

Instructions

  • Roast the Sweet Potatoes in the Air Fryer: Preheat air fryer to 400°F. Toss diced sweet potatoes with olive oil, smoked paprika, salt, and black pepper. Spread evenly in the air fryer basket. Air fry 12-15 minutes, shaking the basket halfway. Set aside once crispy and tender.
  • Cook the Ground Turkey Skillet: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and garlic, cook 1-2 minutes until fragrant. Add ground turkey, breaking it up, and cook until browned, about 5 minutes. Stir in bell peppers, smoked paprika, chili powder, cumin, salt, and pepper. Pour in ½ cup chicken broth, cover, and simmer 5 minutes. Add spinach or kale if using and stir until wilted.
  • Combine & Serve: Remove from heat. Gently fold in the air-fried sweet potatoes to keep their crispy texture. Top with avocado slices and garnish with fresh cilantro.
